This recipe was inspired by my new found love for ginger. The last few weeks I have been absolutely obsessed with ginger. I’ve been putting it in soups, baking, and just about anything else I can think of. There are candies called ginger chews that I used to really enjoy so I figured I could make a no sugar added, whole food version. They turned out amazing!
Preparation Time: 10 minutes
Cook Time: 20 minutes
Makes: 20 stuffed dates
- 20 medjool dates
- 4 tbsp coconut manna (also called coconut butter)
- 4 tbsp fresh grated ginger
- 2 tbsp coconut oil
- 1/2 tsp vanilla
Preheat oven to 350. In a pan on medium-low heat, melt coconut oil then add grated ginger. Cook for approximately 5 minutes or until soft and then add the coconut manna to pan. Let the manna melt, add in the vanilla, and mix thoroughly. Cook for another 2-3 minutes and then scrap mixture into a bowl to let cool slightly. Pit the dates as delicately as possible (without ripping them totally apart) and then stuff the cooked ginger mixture into each (now empty) pit cavity. Place the dates on a baking sheet with parchment paper and bake in oven for 10-15 minutes until the ginger mixture begins to brown. Let cool 10-20 minutes and then serve.
AIP modification: While vanilla extract is allowed on AIP if it is cooked, you can remove it all together if you are highly sensitive or unsure. All other ingredients are AIP compliant.
These guys would be great to bring to a potluck or dinner party (or some other get together). They are perfect finger food and are probably better served cool; I burnt myself trying to eat one (lol). Enjoy!
