Is my new found love of leafy greens showing through yet? Since I have been eating AIP I have been using leafy greens to fill out my plate and I am loving it. This recipe is super easy and delicious.


Cook time: 10 minutes

Prep time: 5 minutes

Makes: 1 serving





  • 1/2c shredded (pre-cooked) chicken
  • 1/2 onion, chopped
  • 2 cloves garlic
  • 3-4 large leaves of chard
  • 2 tbsp coconut oil
  • sea salt to taste


Heat coconut oil in a pan on medium-low heat. Add onions and cook until soft, then add garlic and chicken and cook for an additional few minutes. While garlic and chicken are cooking, rip the chard leaves into small pieces excluding the middle stem and then loosely chop it up. Add chard to pan and cook while stirring frequently. Cook for approximately 5 minutes or until chard is soft. Add sea salt if desired and serve hot.

  1. I can't wait to try this with the Mixed Greens that I get from Sam's Club. My favorite is a blend of Spinach, Swiss Chard, and kale. My chicken is already cooked, seasoned with Thai Kitchen's Ginger, Garlic and sesame seeds. I too eat everything with Ginger. I can't seem to get enough of it. I finally got my Mom hooked on ginger tea as well. Score one for me. Thanks for the great inspiration.
