A different spin on the same-old root veggie dish!
Prep time: 15 minutes
Cook time: 1 hour
Makes: 4-5 servings
- 2-3 Beets
- 4-5 Carrots
- 1-2 Onions
- 2-4 white potatoes (optional)
- 1 yam or sweet potato
- 4 tbsp guram masala or some sort of curry spice
- 1/2 coconut milk
- optional: cayenne pepper, salt, pepper
Cut up all vegetables to your liking. Remember that the yam or sweet potato will cook faster than everything else so you should hold off adding them initially. Add everything except yam or sweet potato into a roasting pan, add coconut and spices and mix until everything is thoroughly coated. Cover and bake at 350 for 30 minutes. Remove and add yam or sweet potato and thoroughly mix. Bake for an additional 45 minutes or until everything is cooked to your liking. Serve as a side dish, or as the main course!
